Also great for baked goods, improves dough strength, elasticity, and the overall texture of the finished product. It is especially beneficial when working with flours that are lower in gluten content.

It also contributes to a lighter, airier texture in baked goods by retaining gas bubbles produced by yeast or baking powder.
